Apple Cinnamon Muffins

Ingredients: – 2 cups all-purpose flour – 1/2 cup granulated sugar – 1 tablespoon baking powder – 1/2 teaspoon salt – 1 teaspoon ground cinnamon

– 1/2 cup unsalted butter, melted and cooled – 2 large eggs – 1 cup milk – 1 teaspoon vanilla extract – 1 1/2 cups diced apples (about 2 medium apples)

Instructions: 1. Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin or line it with paper liners. 2. In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon until well combined.

1. In a separate bowl, whisk together the melted butter, eggs, milk, and vanilla extract until smooth. 2. Pour the wet ingredients into the dry ingredients and stir until just combined.

1. Gently fold in the diced apples until evenly distributed throughout the batter. 2. Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.

1. In a small bowl, mix together the sugar and cinnamon for the topping. Sprinkle this mixture evenly over the tops of the muffins. 2. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

1. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely. 2. Enjoy your delicious apple cinnamon muffins warm or at room temperature!
