Cheddar Ham Soup Recipe

Ingredients: – 2 cups cooked ham, diced – 1/2 cup onion, finely chopped – 1/2 cup celery, finely chopped – 1/2 cup carrots, finely chopped – 1/3 cup unsalted butter – 1/3 cup all-purpose flour

– 3 cups chicken broth – 2 cups milk – 2 cups sharp cheddar cheese, shredded – 1/2 cup heavy cream – Salt and pepper to taste – Chopped fresh parsley for garnish (optional)

Sauté Vegetables: – In a large pot, melt the butter over medium heat. Add onions, celery, and carrots. Sauté until the vegetables are tender, about 5-7 minutes.

Make Roux: – Stir in the flour to create a roux. Cook for 2-3 minutes, stirring constantly to prevent lumps.

Add Broth and Milk: – Gradually whisk in the chicken broth and milk. Continue whisking to avoid lumps. Bring the mixture to a simmer.

Add Ham: – Add the diced ham to the pot. Allow the soup to simmer for about 10-15 minutes until it thickens slightly.

Melt Cheese: – Reduce heat to low, then gradually add the shredded cheddar cheese while stirring continuously until the cheese is melted and well incorporated.
