Chia Coconut Pudding with Coconut Milk

Ingredients: – 1/4 cup chia seeds – 1 cup coconut milk (canned, full-fat) – 1 tablespoon maple syrup or honey (optional) – 1/2 teaspoon vanilla extract – Shredded coconut for garnish (optional) – Fresh fruit for topping (optional)

Instructions: 1. In a mixing bowl, combine the chia seeds, coconut milk, maple syrup or honey (if using), and vanilla extract. Stir well to combine all ingredients thoroughly.

Let the mixture sit for about 5 minutes, then stir again to prevent clumping.

Cover the bowl and refrigerate for at least 2 hours, or preferably overnight, to allow the chia seeds to absorb the liquid and thicken.

Once the pudding has thickened to your desired consistency, give it a final stir.
