Cinnamon Roll Easy Coffee Cake

Ingredients: – 2 cups all-purpose flour – 1 cup granulated sugar – 1 tablespoon baking powder – 1/2 teaspoon salt

– 1 cup milk – 1/3 cup vegetable oil – 1 large egg – 1 teaspoon vanilla extract

For the cinnamon swirl: – 1/2 cup brown sugar – 2 teaspoons ground cinnamon – 2 tablespoons melted butter

For the icing: – 1 cup powdered sugar – 2-3 tablespoons milk – 1/2 teaspoon vanilla extract

Instructions: 1. Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking pan or line it with parchment paper.

1. In a large mixing bowl, combine the flour, sugar, baking powder, and salt. 2. In another bowl, whisk together the milk, vegetable oil, egg, and vanilla extract.

1. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay. 2. In a small bowl, mix together the brown sugar and cinnamon for the swirl.

Pour half of the batter into the prepared baking pan. Sprinkle the cinnamon sugar mixture evenly over the batter.

1. Pour the remaining batter over the cinnamon sugar layer, and then use a knife or toothpick to swirl the cinnamon sugar into the batter. 2. Drizzle the melted butter over the top.

Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.

While the coffee cake is baking, prepare the icing by whisking together the powdered sugar, milk, and vanilla extract until smooth. Adjust the consistency by adding more milk if needed.

Once the coffee cake is done, remove it from the oven and let it cool for a few minutes. Drizzle the icing over the warm coffee cake.
