Prepare Mascarpone Mixture: – Beat 1 cup heavy cream until stiff peaks form. – In another bowl, whisk 1 cup mascarpone cheese, 1/2 cup sugar, 1 tsp vanilla, and zest of 2 lemons until smooth. – Gently fold whipped cream into mascarpone mixture.

Soak Ladyfingers: – Combine 1/2 cup lemon juice and 1/4 cup Limoncello in a shallow dish. – Quickly dip ladyfinger cookies into the mixture, but don't oversaturate.

Layering: – Arrange soaked ladyfingers in a 9x9 inch baking dish or serving glasses. – Spread half of the mascarpone mixture over the ladyfingers.

Repeat: – Add another layer of soaked ladyfingers on top. – Spread remaining mascarpone mixture over the ladyfingers.

Chill: – Cover dish with plastic wrap and refrigerate for at least 4 hours or overnight.

Garnish (Optional): – Before serving, garnish with lemon slices and mint leaves.
