Pineapple Cheesecake Bars

Preheat Oven and Prepare Pan: – Preheat your oven to 350°F (175°C). – Grease a 9x9 inch baking pan or line it with parchment paper.

Prepare Crust: – In a mixing bowl, combine 1 1/2 cups graham cracker crumbs and 1/4 cup melted butter until evenly moistened.

Press Crust Into Pan: – Press the mixture firmly into the bottom of the prepared baking pan to form an even crust layer.

Make Cheesecake Filling: – In another bowl, beat 16 ounces of softened cream cheese until smooth. – Gradually add 1/2 cup granulated sugar, 2 eggs, and 1 teaspoon vanilla extract, mixing until well combined.

Add Pineapple: – Fold in 1 cup crushed pineapple (well drained) into the cheesecake mixture until evenly distributed.

Pour Mixture Over Crust: – Pour the cheesecake mixture over the prepared crust, spreading it out evenly with a spatula.

Bake and Cool: – Bake in the preheated oven for 25-30 minutes, or until the edges are set and the center is slightly jiggly.

– Allow the cheesecake bars to cool completely in the pan on a wire rack. – Once cooled, refrigerate for at least 2 hours (or overnight) before slicing into bars.
