Place the sugar cookie mix bag in a large bowl. Add eggs and softened butter and stir until a soft dough forms. It's easier to use my hands to work with stiff dough. Incorporate ¼ cup sprinkles and stir thoroughly.
Scoop and roll dough into a ball with a 1 tablespoon scoop. Insert the ball into your baking pans. You can scoop the right quantity with a tablespoon and roll it into a ball without a scoop. Scoop makes it easier!
Press each dough ball into the pan with a pastry blender. Keep the dough from cracking as you follow this step to have a lovely cookie cup edge.
Funny story: I tried making cookie cups years ago by turning the small muffin pan upside down and molding the dough around the indentations, but it failed.
I had thin cookie scraps and a dirty pan to clean up! This method works better and is easier!
Bake cookie cups for 8-10 minutes until bright golden brown. Remove from oven and let cool for 20 minutes before removing from pan. A little knife can remove them effortlessly.
